Sooji Kachori Recipe

 material:

 • Semolina - 1 cup (180 grams)

 • Potatoes - 4 (300 grams) boiled

 • Oil - for frying the kachoris and for adding to the semolina

 • Green Coriander - 1-2 tbsp

 • Coriander Powder - 1 tsp

 • Amchur powder - tsp

 • Red chili powder - less than tsp

 • Ajwain - tsp

 • Garam Masala - less than tsp

 • Green chili - 1 (finely chopped)

 • Ginger - 1 inch (finely chopped)

 • Salt - 1 tsp or as per taste


 process:

 • Mash the boiled potatoes in a bowl and add 1/2 tsp salt, ginger, coriander powder, mango powder, red chili powder, green chili, garam masala and some green coriander and mix all the ingredients well,  Stuffing is ready.


 • For kneading semolina, put 2 cups of water in the pan, keep it for heating, when the water comes to a boil, add carom seeds, 1/2 tsp salt and 1 table spoon oil and now slowly add it  Add semolina and mix it.


 • Cook the semolina on low flame while stirring continuously till it thickens.  When the semolina becomes thick, turn off the gas and take it down and let it cool slightly while stirring.


 When it starts to cool slightly and can be kneaded by hand, then by applying some oil on the hand, knead it well and prepare it.  The dough is ready, now make a small lemon from this dough by breaking it.


 • Now take a ball with your hand, and while making a little hole, fill it with 1- 1½ tsp stuffing and close it.  Now flatten this stuffed dough by pressing it with the palm of the other hand and give it the shape of a kachori and keep it aside in the plate.  Fill all the dough like this and keep it flat.

 Put oil in a pan and heat it on medium.  Put the kachori in hot oil.  Put as many kachoris as you can in the pan at a time.  Fry the kachoris one by one until they turn golden brown, take out the fried kachoris and place them on a napkin paper laid in a plate.  Similarly prepare all the kachoris by frying them.

 • Sooji Kachoris are ready, serve them with green coriander chutney or tomato sauce and eat.
