paper dosa
material:
• Urad Dhuli Dal - 1 cup
• Rice - 3 cups
• Chana dal - 1/4 cup
• Fenugreek seeds - 1 tbsp
• Salt to taste
• Oil for baking the dosa
process:
• Wash and soak urad dal and rice separately in water for 6 hours or whole night.
• Wash the chana dal and fenugreek seeds and soak them in water for the whole night or 6 hours together.
• Remove the water from the rice and lentils, grind the urad dal in a mixer with a little water, and grind the rice with a little water in a mixer, remove the water from the chana dal and fenugreek seeds and finely grind it in the mixer with some water. Grind it
• Mix the solution of rice and lentils well, now cover this solution and keep it in a warm place for 12 to 14 hours to raise the ferment.
• The dosa solution should be like cheela batter, when the yeast rises in the solution, add salt to it and the dosa solution is ready.
• Heat a non stick griddle, sprinkle some water in it and wipe it with a cloth.
• Now pour the batter on the pan with a large spoon or bowl and make a dosa of 8 to 9 inches by increasing it with a spoon.
• Apply oil on the sides of the dosa, do not flip the dosa, bake the dosa on high heat for 1 minute or till it turns brown, roll the dosa by folding it with the help of a ladle, take it out in a plate, similarly make all the dosa.
