Dabeli Recipe

material:
• Pav - 8
• Butter - 2 tbsp
• Sweet chutney - cup
• Red or green chutney - cup
• Masala Groundnut - 2 tbsp
• Thin sev - cup
• Green coriander - finely chopped cup
• Pomegranate seeds - half a cup
• Whole Coriander - 2 tsp
• Cumin - 1 tsp
• Red chili - 1
• Dal Chini - 1 inch piece
• Cloves - 2
• Black pepper - 3-4
• Potatoes - 4
• Tomato - 2
• Green chili - 1
• Ginger - 1 inch long piece
• Butter - 1 tbsp
• Oil - 1 tbsp
• Cumin - tsp
• Asafoetida - 1 pinch
• Turmeric Powder - 1/4 tsp
• Sugar - 3/4 tsp (if you want)
• Lemon juice - 1 tsp (if you want)
• Salt - as per taste (half tsp)

process:
• Boil the potatoes, peel them and chop them finely.  Wash the tomatoes and cut them into small pieces.  Grate ginger or make a paste.  Finely chop green chilies.

Now let's make Dabeli masala to mix in the stuffing.

• Dabeli Masala -

Put all the spices on a hot pan except red chili and fry them till they turn light brown.  Cool the roasted spices and grind them finely.  Dabeli Masala is ready.  This spice is added while frying the Dabeli stuffing.

• Dabeli Stuffing -
Put butter and oil in a pan and heat it, put asafoetida and cumin seeds in hot butter, add ginger, green chilies and turmeric powder after the cumin is slightly roasted, fry lightly, add chopped tomatoes and cook till the tomatoes are mashed.  Add potatoes, salt and Dabeli masala and fry while stirring for 3-4 minutes.  Dabeli stuffing is ready, take out the stuffing in a bowl and keep it.

• Make Dabeli-
Cut the pav from 2 sides in such a way that it remains attached to the remaining 2 sides, heat the pan, apply some butter on the top and bottom of the cut pav, roast the pav till it turns light brown from both the sides.

• Open the cut part of the pav, apply sweet and salty green chutney on both sides inside the open part, now place a spoonful of Dabeli stuffing on top, a spoonful of horn grain, 1 spoon of sev, 1  Keep 1 tsp green coriander, and 1 tsp pomegranate seeds.  Close the Dabeli by pressing it with your hand.
