Cheese Kachori

 

Cheese Kachori
material:
For making dough for kachori-

• All purpose flour - 2 cups (250 grams)
• Oil - cup (60 grams)
• Salt - 1/2 tsp
• Ajwain - 1/4 tsp
• Baking soda - 1 pinch

For Stuffing-
• Paneer - 75 grams
• Mozzarella cheese - 75 grams
• Capsicum - 1 (finely chopped)
• Green Coriander - 3-4 tbsp (finely chopped)
• Amchur powder - tsp
• Red chili powder - tsp
• Green chili - 1 (finely chopped)
• Ginger - 1 inch piece (grated)
• Salt - 1/4 tsp


 process:

 • Take out all the flour in a big bowl, add tsp salt, 1 pinch baking soda, tsp carom seeds, cup oil and mix everything well, adding water little by little and knead the dough.  (Do not knead the dough much, as soon as the dough is well combined, the Kachori dough is ready).


 • Keep the dough covered for 20 minutes, so that it will rise and set, till the time the dough is set, prepare the stuffing.


 • Make the stuffing-


 Heat 1 tsp oil in a kadhai. When the oil is hot, add finely chopped green chillies, ginger paste, finely chopped capsicum, salt, tsp amchur powder and cook on low flame.


 • Add grated paneer and red chili powder and mix well.  Stuffing is ready, turn off the gas and take out the stuffing in a plate and mix it with green coriander.

 • Grate the pizza cheese and after the stuffing cools down, add it and mix it.  Stuffing for Kachori is ready.


 • Make kachoris and fry them.-


 The dough is ready.  Give it  The kachori is ready after filling, keep it in a plate and prepare all the kachoris filled in this way.


 • Put oil in a pan and heat it.  Giving very less pressure to the kachoris, roll them up and put them in medium hot oil, put 3-4 at a time or as many kachoris as comes in the pan.  When the kachoris swell and float, turn them over. Fry the kachoris from side to side till they turn golden brown.


 • Take out the fried kachoris and place them on a napkin laid in a plate (it takes 8-10 minutes to fry the kachoris at a time). Fry all the kachoris and prepare them.


 • Hot delicious Cheesy Kachori is ready, serve Kachori with tomato chutney, green chutney or tomato sauce and eat it.
